I have decided to order some meat from the farm I get my eggs from. They are not labeled organic in Quebec but all of their cattle, pigs, Boer goats, lambs, chickens and horses are pastured. The cattle are finished in the pasture as well.
My questions specifically are: 1) Any problem with horse meat which I understand is quite lean and with high iron content? 2) Any problem with feeding Listen beef tripe? 3) Any problem with feeding chicken gizzards? 4) I presume that beef, lamb, and pork hearts are okay. Is this correct? 5) Is it ok to have the sole protein in a meal be organ meat or should I always mix with ground/chunk meat or other proteins (eggs, tofu, legumes)?
